    • International Cuisines

           Here's a select list of food sites with recipes from many countries. The big sites, the ones with everything but elephants and acrobats, usually have a good international cuisines section. Several of them are therefore listed both in this section and in the main, "Cream Of The Crop" section.

           These recipes usually have American food measurements. When they don't, I try to let you know. Many sites that conscientiously give both metric measurements and ounces still do not have recipes usable for Americans without a food scale. So be authentic: get a food scale. And/or use the cooking calculators and conversions listed next. (And of course these conversion tables will also enable people from other countries to use American recipes.)

      Cooking Calculators and Conversions An example of the type of conversion you can do: "U.S. recipes oftentimes call for sticks of butter, and U.K. recipes call for grams. This conversion will help convert between the two."

      About Food A mega-site with loads to offer: recipes from around the world, healthy food, a quick recipe for tonight, 1400 crockpot recipes. Whatever.

      Arabic Food Arabic News has a rather small but select collection of recipes from all over the Arab world. Some are for things that sound familiar, such as couscous and shish kabob. Others offer new experiences in taste.

      Asian Grocer Hundreds of Chinese and other Asian recipes, along with some of the hard-to-find ingredients you may need to fix these dishes.

      Ariell's Archives Over 30,000 recipes in the following categories: African, Portuguese, Middle Eastern, Brazilian, Cajun, Greek, Spanish, Caribbean, Spanish. Eggs/Dairy, Equivalents, Lamb, Microwave, Salad Dressings, Beans/Cereals, Ethnic, Sauces/Bbq, Fish, Misc, Shellfish, Breakfast, Fruits, Modified Diet, Snacks, Pastries, Hawaiian, Pizza, Variety Meats, Dumplings, Holidays, Pork.

      Curryholic Cult Recipes from serious curry addicts for serious curry addicts. I had only one problem with this site: they wanted me to buy some plug-in before I could properly view the recipe section. To me, recipes = good, plug-ins = bad. I do not like operating any piece of equipment higher tech than a refrigerator and am being hauled, kicking and screaming, into the Information Age. But without that plug-in. Hah!

      Food of India Like most online Indian food sites, this one is written for the Indian public by an Indian, English being the common language of educated people in India. These sites are so very authentic that an American must struggle to use them. As you probably know, cooks in India do NOT put curry powder in their curries. Instead they use their own unique blends of spices, recipes passed down in the family. Some of the herbs and condiments, such as tamarinds and curry LEAVES (not powder), can be difficult to come by in the U.S. Also, many recipe ingredients are measured using the metric system. A kitchen scale that weighs in both ounces and metrics is invaluable. That having been said, this is a highly complex cuisine that rewards an effort to understand it, and the recipes on this site are a good start.

      Food of India Store An American site that offers the special Indian spices and ingredients necessary to prepare Indian dishes properly.

      German Corner The German Corner has -- you guessed it -- a wonderful selection of German recipes. Plus, they say, "volume to metric conversion: These charts gives the metric equivalent of American cup and spoon sizes for different ingredients." Most of the German recipes sound delightfully authentic, but the site also accepts recipes from the general public, which explains the recipe for oven barbequed hamburgers, sent in by a woman who also sent a recipe for an authentic sounding Bavarian sausage salad.

      Great Chefs of France An unusual site of a type which is perhaps the wave of the future. One first joins the Gourmet's Club, then moves to the "virtual gifts" section and selects a RealVideo of a chef from among many offered. Then one arranges to have it sent electronically to a friend or to oneself. Site is in French and English.

      Heavenly Tiramisu I seem to have missed one of life's great moments. Read Craig's description of his First Fatal Encounter with tiramisu: "When it arrived, I took a spoonful and shoved it rather indelicately into my mouth. The spoon froze there, as waves of wonder flooded my mouth. My eyelids drooped. The ambient sound in the room dropped a decibel or two. A tear crept slowly down my cheek. My focus blurred. My shoulders dropped, and my body relaxed completely. I couldn't feel my feet. I . . . oh, excuse me, I got carried away again." Which is why he has a whole site devoted to tiramisu.

      Ironbark Tree Australian recipes, using both American and Australian measurements. Irish recipes, both ancient and modern, afternoon tea recipes, recipes for cooking with herbs, holiday recipes, and, even, "catering a wedding from home" (menus for 30 which can be easily doubled). In other words, not a run-of-the-mill site. You will need a kitchen scale to use some of these recipes.

      Italian Food Forever Articles on Italian food, a food forum where people can ask questions, cookbooks for sale, and hundreds -- perhaps thousands -- of authentic recipes. Great!

      Kiwi Kitchen Recipes and thoughts from New Zealand food writer Pat Churchill. I especially enjoyed her column on Christmas shopping. (When it comes to Christmas shopping, they are just as downtrodden Down Under as Up Above, plus, it's hot outside.) She says, "I am almost tempted to buy the Christmas collection CD just so I can stamp on it, run it over with the car, belt it with the meat mallet - and feel so much better." The lady has her heat in the right place.

      Kosher Delight The site has, it says, "the best kosher restaurant guide in the world." If you're looking for Jewish hospitals, summer camps, hotels -- the list goes on and on -- it's all on this site. Including a great list of kosher recipes, in English and Hebrew.

      Little Old Mead-Maker You An unusual site that tells us how to make that ancient European beverage, mead, and gives almost-lost formulas for American soda fountain syrups, about which Ed says, "The syrup formulas given here were for use in soda fountains during their heyday. You can make your own sodas, ice cream toppings, etc. with these formulas. If you have an entrepreneurial spirit, you can market a "new" soft drink. At the very least, you can amaze you family and friends with your unique, delicious, natural beverages."

      Mexican Food A great site, in both Spanish and English, with recipes for authentic Mexican food. Recipes are arranged in several ways: by main ingredient, by type of recipe (breakfast, beverages, soup, etc.), or by the region of Mexico where the dish originates.

      Recipe Source A marvellous selection of recipes! For example, they have 54 Filipino recipes, 22 Norwegian recipes, and 107 Korean recipes. If you prefer, you can view their recipe collection broken down into main dish recipes, appetizer recipes, and so forth. In addition they have recipes for the major holidays, recipes for special diets (baby food, diabetic, gluten free, vegetarian), and recipes for "camping, canning & preserving, cat treats & food, cooking for/with kids, copycat, crafts, dog food & treats, dutch oven cooking, extraterrestrial & bizzare, gift ideas, hair & skin products, hints & helpful information, food humor, medieval, microwave, mixes." Absolutely astonishing.

      Roll Your Own Sushi A workmanlike site that teaches you just that.

      Russian Food Authentic recipes and articles from Russians and people of Russian ancestry. You can also shop for Russian collectibles and gifts, including traditional clothing, fur hats, and beautifully decorated Christmas and Easter eggs.

      Sushi Bars and More Another good site that teaches you to make your own sushi. They will not only help you find sushi and make sushi, they offer a sushi chat room and message board. Site includes an expanding list of sushi bars in the U.S.

      The Wokman of Las Vegas Wokman says, "This site is for everyone that loves to cook and eat Chinese food, brought to you by The Wokman of Las Vegas Gao Lingwen. So let's get ready to WOK AND ROLL." Delightful!

      Turkish Recipes Authentic recipes on a no-frills site. Amounts are given in both volume and metric form.

      U.K. Chef On Line The chef sells cookbooks from the U.K. and has a nice online selection of traditional dishes from that part of the world. I checked out Jellied Eels, which I had always wondered about but do not plan to eat, plus a delicious sounding recipe for Creamy Fish Pie I would like to eat. Recipe amounts are in both grams and ounces, but you will still need a kitchen food scale.
